Wearing "lederhosen," a checkered shirt, a blue apron, and bulky shoes, Franz Mulser walks into rustic room. A gray Tyrolean hat is perched on his head, and his face bears cheerful yet sly features. Franz is young and full of dreams. The farmer's son from Siusi has the goal of creating something very special. In his tiny kitchen – with only 27 square feet of floor space, a stove with four gas burners and a little oven – on the Alpe di Siusi, he magically whips up all kinds of unique and unforgettable culinary creations. In the midst of verdant pastures, at an altitude of 1,930 meters above sea-level, the young chef at the Gostner Schwaige Inn owned by his parents has been given the chance to "push the envelope," as he says, and "to offer something different from what anyone else is offering."
